On which measuring principle is the CO2 channel based?

The CO2 sensor consists of an IR light source, a detector and the reflection measuring cell. The infrared light source is reflected by a gas-filled measuring adapter and the light weakened by the analyte gas is measured by the detector.

Does the CO2 channel show cross sensitivities to other gases?

No, the CO2 channel has no cross sensitivities in normal fermentation processes.
